"I think IBM stopped developing the UI after version 5"

Ummm... you'd need to install a version later than 5 to be able make that claim. Try going here http://www.ibm.com/developerworks/downloads/ls/dominodesigner/learn.html and clicking on "Download this product." Since Designer also installs a standalone Notes client, you'll be able to evaluate the Notes UI. Just make sure you connect to a Domino server. Let me know if you need one -- I'll be happy to generate a BleedYellow id for you.
